4 cups of zucchini or a mixture of yellow crookneck squash and zucchini sliced into rounds
1 cup of carrots sliced into 1/4 inch rounds
1 sweet onion sliced how you like it
1 small bag of stuffing mix (I use Pepperidge Farms Seasoned and NOT the cornbread kind)
1 can of cream of chicken soup
1 cup of sour cream (lite or regular but none of that fat free stuff--this is the South!)
Steam zucchini, yellow squash, carrots and onions until tender about 20-30 minutes depending on your preference. Mix the can of soup with the sour cream (do NOT add water) and set aside. When veggies are steamed tender stir them into the soup and sour cream mixture. Spread into a rectangular glass baking dish and top with stuffing mix. Bake at 350 for 30 minutes. Makes a great side dish and I won't claim that it's super healthy with that can of condensed soup in there but a little goes a long way. You'll know if you made it right because it will even taste good cold. Enjoy!
